Easy Thai Beef Lettuce Wraps with Cucumber Salad

Ingredients

  • 3⁄4 lb sirloin steak (can substitute extra lean ground turkey*)

MARINADE

  • 1  tbsp red pepper flakes
  • 2  tbsp ground ginger
  • 2 cloves garlic, minced 1 tbsp lime juice
  • 1 tbsp olive oil
  • 1 tbsp raw sugar (can substitute white sugar)
  • 1⁄2 cup unsalted vegetable stock
  • 1⁄4 cup orange juice

CUCUMBER SALAD

  • 2 cups cucumbers, sliced
  • 1⁄2 cup scallions, chopped
  • 1⁄4 cup cilantro, chopped
  • 1⁄2 tsp fresh mint, chopped
  • 2 tbsp white vinegar
  • 2 tbsp orange juice

WRAPS

  • 6 large leaves from head of Bibb lettuce

Directions

PREP 20 MIN | COOK 10-15 MIN | 2 SERVINGS (3 WRAPS PER SERVING)

In the morning, combine all marinade ingredients, add steak and toss until meat is coated. Place in refrigerator until you’re ready to cook dinner (marinate for at least 30 minutes, but preferably for several hours or all day).

To prepare cucumber salad, toss all salad ingredients together.

Heat grill to high. Cook marinated steak for 5 minutes per side or to your liking. Allow to cool. Cut diagonally across grain into thin slices. Divide steak evenly among 6 leaves of Bibb lettuce and top with cucumber salad. Roll up and serve.

*If using ground turkey: spray medium pan with olive oil, brown turkey and add remaining marinade ingredients. Cover and cook for 15 minutes over medium heat.
