Fish Tacos with Salsa Fresca and Spinach Sauté

Ingredients

  • 1 1⁄2 lbs sole
  • 6 small unsalted corn tortillas (warmed)

FISH TACO MARINADE

  • 2 tbsp chili powder
  • 1 tsp black pepper
  • 1⁄4 cup lime juice
  • 1⁄4 cup orange juice

SALSA FRESCA

  • 1-15 1⁄2 oz can diced tomatoes (no salt added), drained
  • 1⁄4 cup cilantro, chopped
  • 1⁄2 cup white onions, finely chopped
  • 2 tbsp lime juice

SPINACH SAUTÉ

  • 5 cups fresh spinach, chopped
  • 3 cloves of garlic, chopped
  • 1 tbsp olive oil
  • 1 tsp red pepper flakes
  • 1 tsp Italian seasoning

Directions

In small bowl, mix together all marinade ingredients. In large resealable bag, add fish and marinade mixture. Seal bag and shake until fish is well-coated. Marinate for 30 minutes. Heat large pan over medium-high heat, add fish (including marinade) and cook for approximately 10 minutes. Remove from heat and set aside.

While fish is cooking, mix together all salsa fresca ingredients.

For spinach sauté, heat olive oil, add garlic, cook for 1 minute and then add spinach. Cook until spinach is wilted and then add all seasonings.

To serve, put fish in tortilla and top with salsa fresca. Serve with spinach sauté.
